Mango Bango Salsa

It was prepared as part of the SF Food Wars Salsa ChampionChip on September 12, 2010. This salsa won the judges third place award!
INGREDIENTS:
4 cups fire-roasted tomatoes, diced
5 cloves garlic, grated
1 habanero, fire-roasted, seeds removed, liquefied
1/4 tsp oregano (mexican preferred)
1/4 tsp dried basil
1/4 tsp finely ground black pepper
1/2 tsp sea salt
zest and juice of one lime
1 large ripe avocado, peeled, seeded, diced
2 mangos, peeled, seeded, diced

2 mangos, peeled, seeded, diced
PREPARATION:
- Combine the first eight ingredients up to 2 days in advance.
- No more than an hour before serving, fold in the avocado and mangoes.
