Seasonal Cooking Demo and Book Signing: Rachel Saunders

Saturday, December 8, 2012 - 11:00am to 11:45am

Stop by the CUESA Classroom for a cooking demo featuring the seasonal bounty of the Ferry Plaza Farmers Market.

Rachel Saunders’ dream as a child was to write a cookbook. For as long as she can remember, Rachel would pore over cookbooks, enjoy their beautiful pictures and think of the dishes she would cook up. During college, she loved the idea of mastering a language. When she discovered jam, she was immediately drawn to its intricate quality. To her, it was like a language waiting to be learnt, so, after college, this is exactly what she did. She spent ten years learning everything there is to know about jam. For Rachel, mastering the language of jam meant understanding how fruit works, understanding which fruit works together and understanding how sugar and pectin fit into the equation. Once these parts of the jam-making process are mastered, Rachel says, they can be combined with ease, the way words are combined to form a sentence.

Blue Chair Fruit Company, Rachel’s jam business, is one of the premier artisanal jam and marmalade companies in the United States. Located in Oakland, CA, it has redefined preserving through its distinctive brand of modern nostalgia and an exacting approach to fruit and flavors. Their highest priority is using organic and sustainably grown fruit from local growers, and preserving that vibrant fruit flavor by utilizing traditional methods and modern taste sensibilities. In all aspects of the company, from the contents of each jar to the definitive Blue Chair Jam Cookbook, Blue Chair Fruit has reinvented preserving for the modern age.

All demos take place in the CUESA Classroom (under the Ferry Building arches south of the clocktower) at 11 am and are free to the public, with recipes and samples for all.
