Stop by the CUESA Classroom for a cooking demo featuring the seasonal bounty of the Ferry Plaza Farmers Market.

Growing up in the bustling city of Manila, Philippines, Chef Francis Ang was always surrounded by a diverse culture of true fusion style food. Ang’s exposure to the country’s historical influences from Malayan settlers, Chinese tradesman, Spanish rule and American colonialism has played an important role in how he approaches food and culture.

Ang moved to San Francisco at the age of 19 and attended the culinary program at City College of San Francisco. Upon graduation, he landed an internship at the Copenhagen Bakery in Burlingame and shortly after, found himself working at Gary Danko, where he was lucky enough to be trained under Gary Danko himself. In 2008, Francis joined the culinary team at the acclaimed Fifth Floor restaurant and worked his way up to the position of executive pastry chef; he received numerous accolades, including Food & Wine magazine’s “People’s Best Pastry Chef” for the west coast, and was named to Zagat San Francisco’s “30 Under 30” list of culinary influencers. He then became the executive sous chef and pastry chef for Dirty Habit and worked closely with Chef David Bazirgan, with whom he collaborated to explore the delicious potential of savory flavors.

Inspired to utilize his knowledge of sweet and savory to develop a new dimension of Filipino cuisine, Ang and his wife Dian founded in Pinoy Heritage in 2013. Through their pop ups and presence at San Francisco’s new “Undiscovered” creative night market, Pinoy Heritage hopes to showcase the evolution, diversity, and approachability of Filipino flavors under the influence of local California produce.  

October is Filipino Heritage Month and CUESA is proud to support the established and emerging community of Filipino chefs, foodmakers, and farms. In October, CUESA’s Market To Table program spotlights Filipino culinary talent who are part of the Bay Area’s new monthly creative night market “Undiscovered,” held every third Friday at the iconic Old Mint, which is located within the borders of Soma Pilipinas, San Francisco’s Filipino cultural district.

All demos take place in the CUESA Classroom (under the white tents in front of the Ferry Building) and are free to the public, with recipes and samples for all.
