Cresta di Gallo

These leafy chrysanthemum greens are known in Italian as cresta di gallo (“rooster crest”), in Japanese as shungiku, and in Cantonese as tong hao. They have a fresh and tart flavor that is enjoyed braised or lightly steamed, and served in stir-fries or hot pot.
