Red carrots

Their deep red skin is chock-full of lycopene, an important antioxidant, and their flavor is earthy and sweet. Red carrots are delicious when roasted alongside other root vegetables and are the perfect accompaniment to a roasted chicken. Roast extras so the leftover root vegetables can be pureed and turned into an easy weeknight soup.
