A robust and bright herb with leaves that resemble pine needles, rosemary compliments a wide variety of dishes, including meat (specifically lamb), chicken, roasted potatoes, risotto, stuffing, sausage, and pasta sauce. A highly astringent herb, rosemary is a also prominent ingredient in a wide variety of cleaning products, ranging from dish soap to shampoo. Recent studies show that the aroma of rosemary aids in memory, sustained attention, and other cognitive skills.
