Yacon
A sweet-tasting tuber in the sunflower family, yacon (pronounced ya-KOHN) is native to South America. Also known as “Peruvian ground apple,” it is sometimes confused with jicama, as it shares a similar texture and flavor, though the two plants are unrelated.
