Watermelon, Cucumber, and Heirloom Cherry Tomato Salad

This recipe was demonstrated for CUESA’s Market to Table program on July 7, 2012.

Serves 8

INGREDIENTS

½ small yellow or red seedless watermelon, cut into ½-inch cubes (about 3 cups)
3 cucumbers, peeled (if skin is thick or bitter) and cut into ½-inch cubes (about 2 cups)
1 pint heirloom green, black, or yellow cherry tomatoes, halved (about 2 cups)
Zest of 1 lime
1 to 2 limes, juiced (about ¼ cup)
1 lemon, juiced (about ¼ cup)
½  to ¾ teaspoon sea salt or kosher salt, to taste
½ teaspoon chile powder

Grilled Corn and Arugula Salad with Smoked Tomato Vinaigrette

INGREDIENTS

3 ears fresh corn in their husks
2 red bell peppers
1 tomato, diced
½ garlic clove, chopped
1 tablespoon red wine vinegar   
¼ cup extra-virgin olive oil
Salt and freshly ground black pepper
3 bunches arugula, stems removed (about 8 cups)
¾ cup imported black or green olives
1½ cups (8 ounces) red and yellow cherry tomatoes, halved
3-ounce piece of Parmigiano Reggiano cheese

PREPARATION

Sweet Corn and Fresh Oregano Fritters

INGREDIENTS

4 ears sweet corn
¼ yellow onion
1¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon sea salt or kosher salt, plus extra for sprinkling
¼ teaspoon freshly ground black pepper
3 tablespoons chopped fresh oregano
1 egg
1 to 2 tablespoons extra-virgin olive oil
Crème fraîche (optional)

Lamb Ragu with English Peas

This recipe was demonstrated for CUESA’s Market to Table program on June 30, 2012.

Serves 6 to 8

INGREDIENTS

2 tablespoons extra-virgin olive oil
1 yellow onion, diced
Salt    
1 pound ground lamb
4 lamb merguez sausages, removed from their casings
1 (28-ounce) can of tomatoes, crushed by hand into a bowl
1 pound best-quality dried pasta, such as rigatoni
1 pound fresh English peas, shucked
