Baked Sweet Potato Chips

INGREDIENTS

3-4 sweet potatoes
1 tablespoon olive oil
Small pinch cayenne pepper
Salt and freshly cracked pepper, to taste
1 lemon, cut into wedges

PREPARATION

  1. Preheat oven to 400 degrees.

  2. Peel sweet potatoes and slice very thin with a sharp knife or a mandolin. Toss the sweet potato rounds in a large bowl with just a bit of olive oil.
  3. Place sweet potatoes in a single layer on a baking sheet and bake for about 10-15 minutes.
  4. Flip the sweet potatoes over and bake for another 10 minutes or so, until they are beginning to darken around the edges and they are cooked through.
  5. Wipe out the large bowl used to toss the sweet potatoes with olive oil.  Remove from the oven and place in the bowl and toss with cayenne, salt and pepper.  Serve sweet potatoes with lemon wedges.
