Cocktail: Eddystone's Watch

Makes one cocktail

INGREDIENTS

2 ounces Plymouth Gin
.5 ounce Lemon Verbena syrup*
.75 ounce lemon juice
⅓ of a peach
Dashes of angostura bitters

PREPARATION

  1. Dice up one third of a peach and muddle in a mixing glass. Add ice and the other ingredients.

  2. Shake and strain into a cocktail glass.

For the lemon verbena syrup
Take two to one water to sugar, bring to a boil, and remove from heat. Add verbena leaves to syrup and allow it to sit for 48 hours.
