Lemon Garlic Roasted Asparagus

The asparagus takes on an earthiness that normally is not associated with the vegetable. It is best served with grilled steak or chicken.

Serves 4
 

INGREDIENTS

1 pound asparagus, trimmed and blanched
2 tablespoons olive oil
1 large clove garlic, minced
Salt & pepper to taste
Juice of 1 lemon
Parmesan shavings, optional
 

PREPARATION

  1. Preheat oven to 450 degrees.
     
  2. Toss asparagus with olive oil and garlic; season with salt & pepper. Bake until asparagus are tender and lightly browned.
     
  3. Remove from oven and add lemon juice and stir; adjust seasoning to taste.
     
  4. Top with parmesan shavings and serve. Decorate plate with lemon slice.
