Tayberry-Melon Salad with Sweet Fromage Blanc and Basil Syrup

INGREDIENTS

½ cup sugar
1 cup water
1 cup packed basil leaves
Salt, to taste
½ cup fromage blanc
Zest of 1 lemon
2 tablespoons sugar
2 tablespoons milk
Cantaloupe, cut into ½-inch pieces
1 pint tayberries
Fromage blanc
¼ cup sliced almonds, toasted

PREPARATION

Basil syrup: In a saucepan over low heat, melt sugar and water together. Take off heat, add basil leaves and steep approximately 15 minutes. Strain and add a pinch of salt.  Cool.

Fromage blanc: Puree fromage blanc, lemon, pinch of salt, and milk until smooth. Set aside.

To finish: Assemble fruit, cheese and almonds.  Drizzle with syrup and serve.
