Ethel's Bagels

Based in Petaluma and named after chef Nicolas Abrams’ grandmother, Ethel’s Bagels makes “West Coast bagels with East Coast attitude,” including organic and hand-rolled bagels, schmears, and hot breakfast sandwiches. Their sourdough starter is enlivened with local organic flour, and the bagels are boiled with water, Lagunitas beer, and organic malt syrup.

Fun Fact

Nicolas and his wife, Clare, and children Oliver and Freya all help out in the bagel business.
