On their honeymoon, Joel
and Naomi traveled through Italy, France, and Spain on a gastronomic tour. They were inspired by both the traditional wood-fired pizzas and the innovative mobile food vendors at the farmers markets there. In order to combine those elements, they mounted a Neapolitan wood-fired oven to a custom-built trailer that can easily be transported to farmersmarkets and events.


Pizza Politana uses Central Milling 00 organic flour to make the dough. The toppings on their pizzas are from local food producers and artisans, such as cheeses from Cowgirl Creamery and seasonal vegetables from Ferry Plaza farms such as Star Route Farms and County Line Harvest.

Fun Fact

Pizza Politana keeps their ovens at 800˚F while they’re making pizzas, meaning that each pie only takes about three minutes to bake.
